Open the inventory, select an item or money, press Apply, then save and reload the game: the selected item's amount is changed. Caution: a very high amount may make the game lag or crash when the inventory opens.

Only the lighting and the clock shown stop; the game's own clock runs on, and the time catches up when this is turned off.
While Freeze Daytime is on, the change only shows once it is turned off.
